As a chocoloholic I’m always on the hunt for a little something sweet each day. Whether it be dark chocolate almonds, or my favorite Peanut Butter Energy bites I crave something to satisfy my sweet tooth. I first had these bars at Moveable Feist in Geneva and knew I had to recreate them on my own. After several attempts we perfected the recipe. The kids enjoy these too. It’s important to me that even when baking, the ingredients we use are healthy. If anyone in your family has food senstivities or allergies you could swap peanut butter or sunflower seed butter for almond butter.
Tasty Raw Bars
Preparation time: 30 minutes total
Portions 20 bars

Ingredients
1 1/2 Cup Almonds
3/4 Cup Coconut Shreads
1/2 Cup Arrowhead Mills Coconut Flour
4 Cups of Dates
3/4 Cup Almond Butter
1 Tablespoon Maple Syrup
1/2 Teaspoon Vanilla
1/4 Cup Water
2 Cups dark chocolate
Salt
In a food processor mix together:
1 Cup Almonds
3/4 Cup Coconut Shreads
1/2 Cup Coconut Flour
4 Cups of Dates
3/4 Cup Almond Butter
1 tablespoon Maple Syrup
1/2 Teaspoon Vanilla
1/4 Cup Water
Line a rimmed baking sheet with parchment paper. Using a spatula spread the mixer evenlly into the baking sheet. Place the baking sheet in refridgerator for 15-20 minutes or until they harden.
Remove and melt 2 cups of dark chocolate on top of the above mixer. Spread evenually with a spatula. Garnish with 1/2 cup of almonds and a dash of salt.
Put back in refrigerator for another 15 minutes or until chocolate hardens. Remove and cut into squares. Can’t eat them all or don’t want to share? I put the extra in ziploc bags and freeze for a later date.
